Keto Cranberry Muffins

Cranberry, Almond and Chocolate Muffins

Equipment

  • Muffin Pan
  • Baking Cups, optional for decorating

Ingredients
  

  • 1/2 cup Coconut Flour
  • 3 tsp Baking Posder
  • 2 cups Almond Meal
  • 1/4 cup Powdered Stevia Sweetener
  • 75 g Dark Chocolate, Chopped (1/3 cups)
  • 3 lg Eggs, lightly wisked
  • 2 tsp Vanilla Extract
  • 1/4 cup Almond Milk
  • 125 g Unlsated Butter, melted (1 cup)
  • 1/3 cup dried cranberreies or fresh strawberries

Instructions
 

  • Step 1 - Preheat oven to 150 C
  • Step 2 - Sift the coconut flour and baking posder. Add almond meal, stevia, strawberries and chcolate.
  • Step 3 - Whisk eggs, vanilla and almond milk. Add egg mixture and butter to the dry ingredietns.
  • Step 4 - Add misture to prepared muffin tray. Bake for 2-=25 minutes or until golden. Set aside for 5 minutes
